Ingredients

  • All-purpose flour- 2 Cups
  • Powdered sugar- 1 cup
  • Baking Powder- 1/2 teaspoon
  • Baking soda- 1/2 teaspoon
  • A pinch of Salt
  • Unsalted butter at room temperature- 1/2 cup
  • 2 Eggs
  • Vanilla extract- 1 teaspoon
  • Buttermilk- 1 cup
  • Shredded coconut- 1/4 cup
  • Crushed freeze-dried pineapple– 1/2 cup
  • A few pieces of crunchy freeze-dried pineapple and cherries
 

Instructions

  1. Preheat the oven to 180℃.
  2. Grease the 9-inch cake pan and dust some flour inside the pan.
  3. In a bowl, gently mix all the dry ingredients (all-purpose flour, powdered sugar, baking powder, baking soda and salt).
  4. In another bowl, whip the butter using a blender until it turns soft, fluffy and creamy. Freeze the bowl first to maintain the coldness of the butter.
  5. Add eggs to the bowl one at a time and keep blending.
  6. Add the goodness of vanilla extract to the mixture.
  7. Gently add the buttermilk and stir regularly.
  8. Gradually add dry ingredients into the bowl and fold them into the mixture. Take care that no lumps are formed while stirring.
  9. Add the crushed pieces of freeze-dried pineapples and shredded coconut into the batter.
  10. Pour the batter into the already dusted and greased cake pan and smooth the top layer of the batter with a spatula.
  11. Bake for 35-40 minutes. Check the cake by inserting a toothpick into it. If the toothpick comes out clean, your delicious cake is ready.
  12. Remove the cake from the oven and let it cool for a few minutes.
  13. Once cooled, transfer the cook to a wire rack or a flat plate.
  14. Decorate the cake by dusting finely powdered sugar and a few freeze-dried Pineapple pieces or cover it entirely with shredded coconut topped with pineapple pieces.
  15. If you are a fan of cream, add a creamy frosting over the cake and top it up with freeze-dried Pineapple pieces and cherries.

  • Coconut milk-1 can (14 oz)
  • Granulated sugar-1/2 cup
  • Vanilla extract-1 tsp
  • Freeze-dried pineapple, crushed-1/2 cup
  • Shredded coconut, toasted- 1/4 cup
  • Pinch of salt

Instructions: 

  1. Mix the Arborio rice, water, and salt in a large saucepan.
  2.  Bring the mix to a boil, then simmer for about 20 minutes.
  3.  Stir occasionally, until the rice is tender and the liquid is absorbed.
  4. Heat the coconut milk and sugar over medium heat in a separate saucepan.
  5. Keep stirring until the sugar dissolves.
  6. Add the vanilla extract and stir to blend well.
  7. Add the coconut milk mixture to the cooked rice and keep stirring.
  8. Simmer for an additional 10-15 minutes, stirring frequently, until the mixture thickens and becomes creamy.
  9. Remove from heat and stir in the crushed freeze-dried pineapple.
  10. Transfer the rice pudding to serving bowls and sprinkle with toasted shredded coconut.

  • Crushed Freeze-dried Strawberries– 1/2 cup or 60gms

Instructions: 

  • Blend the Freeze-dried strawberries to form a fine powder. Do reserve a few strawberries for garnishing.
  • Whip the sweetened condensed milk and cream in a bowl until the mixture thickens or forms a cone when you swirl it around.
  • Add strawberry powder and vanilla extract to the whipped cream and condensed milk. Continue creaming the mixture for 5 minutes or until it forms soft peaks.
  • Heavy cream whips better when chilled. So, chill the mixing bowl first to keep the cream cold enough while beating.
  • Transfer the contents of the bowl to a standard loaf pan.
  • Gently swirl some dollops of strawberry jam into the pan with the help of a butter knife.
  • Cover the pan with plastic wrap or aluminium foil.
  • Freeze the contents for at least 6 hours or preferably overnight.
  • Garnish the ice cream with a few freeze-dried strawberry pieces before serving it straight out of the freezer.
