Strawberry Ice-Cream

Every one of us is a fan of Strawberry ice cream. But to make one bewilders us with the ingredients that have the same smooth, creamy, and mouth-watering strawberry flavour. Fresh Strawberries have a rich, juicy flavour, but their moisture content weakens the flavour and gives the ice cream a crystalline texture.

Incorporate the goodness of freeze-dried strawberries in making a hassle-free, no-churn recipe for delicious strawberry ice cream. Since the moisture content of freeze-dried strawberries is much less, they form the perfect option for a crystal-free, creamy textured ice cream.

Ingredients

  • Cups of Cream- 1 1/4
  • Sweetened condensed milk- 2/3 cup
  • Vanilla extract- 2 teaspoon/Vanilla Bean Pods- 1-2
  • A dash of strawberry jam (optional)
  • Crushed Freeze-dried Strawberries– 1/2 cup or 60gms

Instructions: 

  • Blend the Freeze-dried strawberries to form a fine powder. Do reserve a few strawberries for garnishing.
  • Whip the sweetened condensed milk and cream in a bowl until the mixture thickens or forms a cone when you swirl it around.
  • Add strawberry powder and vanilla extract to the whipped cream and condensed milk. Continue creaming the mixture for 5 minutes or until it forms soft peaks.
  • Heavy cream whips better when chilled. So, chill the mixing bowl first to keep the cream cold enough while beating.
  • Transfer the contents of the bowl to a standard loaf pan.
  • Gently swirl some dollops of strawberry jam into the pan with the help of a butter knife.
  • Cover the pan with plastic wrap or aluminium foil.
  • Freeze the contents for at least 6 hours or preferably overnight.
  • Garnish the ice cream with a few freeze-dried strawberry pieces before serving it straight out of the freezer.
